Because I wasn't going to have enough time to get the judges going this month, we've decided to extend the contest until January 31 at midnight. Yes, because I'm a slacker, you now have two additional weeks to create a masterpiece.

Use the time wisely! Encourage others to submit an entry!

for those of us who submitted 3 already before the original deadline, is there any hope of adding a 4th entry or being able to substitute/redo?

One of the other admins can correct me if I'm wrong, but you should be able to add and delete to your heart's content, as long as you have no more than three by the deadline.
